I don’t often indulge in mac n cheese, but when I do, I don’t skimp on the cheese. And yea, I added truffle salt. Sue me.
When I studied abroad in Australia, I lived in student housing, which meant we were packed into the smallest living spaces humanly possible. The “kitchen” consisted of a fridge, microwave, and two electric burners – no oven. I started to get creative with my stovetop cooking, and that’s when I made tempura for the first time. My friends and I had just returned from an incredible trip up and down the east coast of Australia, tanned, relaxed, and with tons of photos to swap. We crammed into the tiny room my roommate and I shared and exchanged pictures and music while stuffing our faces with tempura. We laughed, ate, and reminisced until half of us passed out food-coma status and the other half gave up on our experimental game of “can we tempura it” and decided to call it a night.
If a drink has ginger simple syrup in it, my mom and I have always called it a Zanzini. I thought that’s what everyone called them, but apparently we made it up. Seriously, try googling “Zanzini Recipe”… nothing. Regardless, ginger simple syrup is a delicious way to add sweetness and zest to any cocktail. I had a ripe, juicy grapefruit, so I was so excited to combine the tart juice with some fresh mint and ginger. These seriously strong, refreshing cocktails are so simple to make and absolutely perfect for lounging potentials this spring!
My bff My mom and I love to go out for dinner and drinks, and one of our favorite local spots is the Los Altos Bar & Grill. The menu is always changing, but why they took the tuna burger off the menu is something I will never get over. Sometimes I go to sleep at night thinking about this beautifully buttery, saliva-inducing seafood creation and my lip quivers as a single tear runs down my cheek. I’m exaggerating slightly, but the point is: I crave this seared, hearty beast of a burger and decided it’s time to take matters into my own hands.
If you want to blow the pants off your tastebuds without having to try that hard, this recipe is for you. You don’t have to sweat your tits off going wild and crazy in the kitchen to produce a hearty seafood soup that resembles the tears of the gods. That’s the beauty of one-pot recipes – they are pretty hard to screw up. Plus, you can customize the flavors however they happen to excite your palette.
